Announcing The PaleoFX 2013 Challenge!

Announcing the PaleoFX Challenge sponsored by Onnit Labs and Muscle Ropes!

Look for this event on the strength and conditioning floor during PaleoFX on Friday and Saturday. Open to all attendees. Separate Mens and Womens divisions.  Awesome prizes. Four events to test your mettle!

When the new speaker’s schedule was released recently, I was immediately the most excited for the Cave Kids – Raising your Little Neanderthals panel. I have a fairly picky little toddler who adores my baked goods, but frequently turns his nose up to some of our main entrees. So much so that I specifically formulated an entire chapter of my new cookbook to cater to Paleo children who are picky eaters. With popular child-friendly books already under their belts, it will be inspiring to hear recipe tips from Stacy Toth and Sarah Fragoso and nutritional advice from Chris Kresser, Marissa Pelligrino, and Dr. Emily Deans.

 

I find the best way to get my son to eat the things I make is to let him participate in the process. If he sees what is going into the bowl or the oven and gets to lend a hand, he is more willing to try the final product and see what all of his work resulted in. These naturally green cookies are probably one of the most fun recipes we make and as a bonus, there’s a science lesson involved! They are nut and egg free, so they’re also a practical cookie to send to allergy-friendly schools while still allowing your kids to enjoy a special treat at the St. Patrick’s Day celebrations happening this week.

  • Contigo is all about community. Picnic tables abound this open-air ranch-style spot that feels like more of a playground than a restaurant. Driving up to this way East gem, you are immediately greeted by the sound of laughter and a feeling of calm. That feels pretty paleo to me.
  • Ben from Contigo outlined the best options for eating paleo here including the Mussels in yellow curry, Brussel Sprouts, chili flaked olives and spinach salad. From the charcuterie board, the divine crepinette is a hot salad of ground pork, earl grey currants, crimini mushrooms and herbs. Also try the face bacon and tenderloin terrine. For your “big plate,” go for the Dewberry Hills Chicken, or the burger or sausage with no bun.
  • I recommend: The porchetta. This Saturday special is why I wanted to write about Contigo in the first place. This may be my “last meal on earth” dish. Here’s why: It is a 2″ thick, 6″ diameter slice of pastured pork roast, wrapped in pork skin and flash fried until the outer crust becomes a chicharon. What’s a chicharon? Check out this post. The whole thing is juicy, salty crunchy and full of that au jus goodness. GET THIS if you are here on Saturday.
